You wouldn't be able to produce vitamin D so you wouldn't be able to absorb calcium into your cells and you would die. Plants would die off because they need UV for photosynthesis. It's a problem on many levels to not have UV light.
What is the worst thing that could happen if we don't have Ultra Violet Rays?
To not have UV rays, you also wouldn't have all the other forms of electromagnetic radiation. This means that photons wouldn't exist, which means the electromagnetic force wouldn't exist. Protons, neutrons, and electrons would still exist, but there would be nothing to hold them together. Therefore no atoms would exist. Because there would be no atoms, we wouldn't exist. Be very thankful that they do exist.
